I have a 87 3.9 and I'm trying to delete all of the emissions and evap but I don't know what to do or how to do it being as I don't fully understand the EVAP system or see it's purpose, I can delete the easy stuff without issues but I'm wondering how it would affect solenoids that are evap based and how that might affect the ECU and run quality.

Everything is still ran originally but put together poorly so I just want to delete it entirely any help would be very appreciated and any other information or knowledge on the 87 is always a great help!!

Ah ok, your first IP address showed you in CA. The whole point of the evap system is to keep gas vapors from reaching the atmosphere. As you can see, there are a fuckton of just vacuum lines (hoses) that run between the evap system and the just the carb. Best case scenario you should be able to disconnect all that from the carb, getting rid of the tee with the brake booster and capping all other ports (except PCV & EGR). What you really need to figure out is what kind of electrical connections (if any) there are with the system. You have an electronic carb so it isn't like you have a very sophisticated ECM controlling things.
