Does anyone know how much HP and TQ the stock 2005 5.9 Cummins engine produces and how much the 2005 stock high output cummins puts out? I am trying to compare.

You mean the difference between the 600 and the 610? I believe the they're the same 325hp rating but only 10ft lbs of torque difference. Just a software change to the ECM.
