'98 Ram 4x4 with 2" spacer in front.

Would a 16X8 rim w/ 5" backspacing fit OK? Tires are 285/75's...

I think they would rub when you have the wheels turned almost all the way.

Is it a 1500/2500 or 3500? I have a 2500 no lift and 33's fit with plenty of room.

It's a 1500. However, I just picked up a set of the factory 17x8 Off Road Rims, so I'm going a different route.
