my 02 GC has just over 50K on it. just recently, it has started to hesitate on acceleration. last night, the wife told me that twice on the way home, from a complete stop, the van would not move until it was over 3000rpm. I've basically ruled out anything related to fuel, unless i may be wrong.

that was the first time it happened from a start. the other day i was driving it, and around 30mph, it would hesitate, then take off...

any clues or things i should look for?

I'd take it to an auto parts store that will scan your codes for free. Auto Zone, Advance and, I think, Pep Boys and O'Reilly do it around here. It sounds like some sort of fuel management problem that's likely electronic, and a simple parts replacement. You could also have an accumulation of gunk in your throttle body or intake that is clogging the EGR.

Good luck, and report back on what you find out.

so, even if it's not showing a scheck engine light, it can still throw codes? i figure i can hook it up to my AutoEnginuity and see whats there?

Not sure what AutoEnginuity is, but, yes, codes can be present without a check engine light. In fact, in my experience the SES light only comes on if the O2 sensor is bad. I've never seen it come up for anything else.
