How can the engine cooliant temp sensor stop the raditor fans from coming on when the a/c is on?

I'm not sure I understand your question right. Are you saying you don't want the fans to come on when the a/c is on? Why not? It is not the coolant sensor that tells the fans to come on when the a/c is on. There is a sensor/relay on the a/c system that tells the PCM to run both fans.
